Beef Soup Noodles, Shandong-style

So it was my last few hours in Taipei, and I still hadn't found a cut-noodle place. We asked about in the shopping area behind the Taipei Main Station, but no one knew of any. They suggested we might walk down this alley or that alley to check, but no one was sure. It was getting late, and we never did find a cut noodle place, but we did run across the Shandong hand-pulled noodle place. It was a coincidence because Chang's grandparents are from Shandong and we were talking about it earlier. Anyhow this was the best beef noodles I had on the entire trip. The beef was tender and flavorful, but not overpowering. The broth was also very rich (okay, maybe a little on the oily side.) The noodles were nicely al dente, with a chewy bite. I love the way they just had bowls of pepper, chili sauce, and pickled vegetables so you could add as much or as little as you wanted. It's absurd how happy these noodles made me.
