We ended up eating at this noodle stall in the alley. It looked really good; the ingredients (oysters, shrimp, chicken, etc.) were nicely presented on ice in the front of the stall and they all looked fresh. And there was a raw noodle stand across the alley. But the guy was really surly. We called him the 'Noodle Nazi', another Seinfeld reference. He wanted to know what you wanted to order, and that was it. No extraneous questions or comments. But the noodles were really good. Turns out he's also the local noodle distributor. The raw noodle stand across the alley was his, too. The broth had a deep, rich, satisfying flavor. Afterwards, we got up and Chang thanked him and then complimented him on the food and the guy was, ya, ya, whatever.
